I tried, friends. I really tried.

This year I set out to make a low-carb pumpkin pie — no sugar, no guilt, just love and apple sauce. It was supposed to be wholesome, cozy, and “diabetic-friendly.” Let’s just say… the universe had other plans.

It didn’t quite set right. The texture said “baby food,” not “Thanksgiving.” And I was hankering for pie. You know that kind of craving that won’t leave you alone? The one that follows you around whispering, “Pumpkin… pumpkin…”

So I gave in. I bought one — the real deal, golden crust, sugary filling, whipped cream cloud on top. Last night I had a slice, and I survived.

This morning, feeling wise and bold (or maybe just reckless), I had a big piece for breakfast.

By afternoon, I decided to balance it out — I walked to the grocery store. All was well until halfway home, when my stomach began to protest. Loudly. Let’s just say it was a very mindful walk home, each step a prayer that I’d make it to my door.

I did. But alas… pumpkin pie and I must part ways.

Still, there’s something beautifully human about it all — trying, failing, laughing, and forgiving ourselves. Diabetes may demand discipline, but it also teaches patience and humor.

Next time I’ll experiment again — maybe almond flour, maybe coconut milk, maybe just acceptance.

Until then, I’ll sip tea, listen to my body, and remember that even pie lessons are part of the journey.
